Wine making.
Picking off, cuvaison approximately twelve days, daily control of the temperatures, 25 with 30°c of fermentation, the second fermentation (malo-lactic) and filtration on ground.
Characteristics of the wine.
The Sauvignon Cabernet brings its wealth of tannins which makes the wine possible to age well. The Cabernet Franc contributes to the flexibility and the smoothness. It is more tolerant from the ground point of view of and dryness.
Merlot brings the degrees necessary to the flexibility, the roundness and the wine body. It gives coloured, more flexible, less tannic wines and with fast evolution.
