Grape varieties : 60% Merlot, 30% Cabernet Sauvignon, 10% Cabernet Franc Vinification : Meticulous monitoring of the ripeness of the grapes before picking leads to a harvest rich in polyphenols. After the harvest has been sorted on arrival at the winery, the grapes are de-stemmed and put into vats for the alcoholic fermentation process. The wine is pumped over daily and monitored closely for 20 days at a temperature of 28 - 30°C, resulting in a fleshy, fruity wine with balanced tannins. Characteristics of the grape varieties and the wine : The Merlot, with its silky tannins, provides the wine with roundness. The Cabernet Sauvignon produces a firm wine with a bright, brilliant colour - perhaps a little harsh when young, but full of delicacy and bouquet after a few years. The Cabernet Franc gives the wine similar features to the previous one, but with more bouquet. The supple attack in the mouth, the silky tannins and the flavours of red fruit make this a wine which will express all its personality for several years. |
